Recipe for approx. 10 pcs:
Ginger cup cakes:
1 tbsp. coffee liqueur or strong coffee
Sugar decorations in golden colors
Start by turning the oven to 180 °. Melt 100 g butter in a pan. Grease 10 muffin tins with the rest of the butter. Then beat eggs and sugar to a fluffy cream. Flip flour with baking powder and spices. Dry the flour mixture in the eggs, add milk, and whip to a uniform dough. Pour melted butter into the dough and distribute it in the greased molds. Bake the cakes in the oven for 20-25 minutes. Cool on a rack.
While the cakes are cooling, whip the soft butter, and add the sifted icing sugar, vanilla sugar and cocoa a little at a time. Whip to a glossy buttercream, and season with coffee or coffee liqueur. Fill the cream in a spray bag with tulle and refrigerate for 30 minutes. Decorate the cakes with buttercream, and decorate with crushed and whole lollipops as well as sugar decorations.
